I love cookbooks!  Healthy vegan cooking is my latest interest, ever since my beloved jumped feet first into a plant-based diet.  He's now lost 40 lbs. without even trying!  Rather than take my chances and buy cookbooks that I may never use, I audition them, thanks to my local library.  Test drive before you buy.

Vegan Treats

★★★★★ How do you rate perfection?  With five stars, natch.   

It is no secret that birthday cake is my all-time favorite guilty pleasure food.  So it was no surprise that the celebration of my beloved's birthday led us on a pilgrimage to Vegan Treats in Bethlehem, PA to find the perfect cake.  Although we didn't see Jesus during our brief stay in Bethlehem, I am pretty sure we heard angels singing while enjoying our tasty treats. 


So many selections.  All treats were vegan, but the third row was also gluten-free, which made Justin super happy.  Check out their latest menu HERE.


Vegan Treats also has vegan soft-serve ice cream, to the delight of Lauren and Justin who can't have dairy.  Vegan Treats, if you are reading this, please BRING BACK PUMPKIN!  And, a cook book would be terrific.  Thank you.

Here is my supernaturally delicious chocolate cake.  Yum!  I had to take half of it home in a box, it was so rich and delightful.  Justin, who has autism, later dropped the box in our driveway spilling its contents.  This made me sad, so we went back a few days later for more treats!

Down 20 Pounds = Meatless Monday + Life-Changing Documentary

About a month ago, my beloved and I watched "Forks Over Knives" on Netflix.  My friend Vicki had recommended it last year, but we were busy with life and put it off, darn it!  You know how sometimes you wish you could have a do-over?  This is one of those times.  We have been telling everyone about this movie, which now includes you.  Don't wait.  Watch it right away.  TWO THUMBS UP! 


The documentary takes a look at the theory that most, if not all, degenerative diseases can be controlled, or even reversed, by following a whole-food, plant-based diet. The story traces the personal journeys of two pioneering researchers, Dr. T. Colin Campbell (author of The China Study and nutritional scientist at Cornell University) and Dr. Caldwell Esselstyn (top surgeon and head of the Breast Cancer Task Force at the world-renowned Cleveland Clinic).

Dr. Campbell was concerned in the late 1960s with producing high quality animal protein to bring to the poor and malnourished areas of the third world. While in the Philippines, he made a life-changing discovery: the country's wealthier children, who were consuming relatively high amounts of animal-based foods, were much more likely to get liver cancer. Dr. Esselstyn found that many of the diseases he routinely treated were virtually unknown in parts of the world where animal-based foods were rarely consumed.

These discoveries inspired Drs. Campbell and Esselstyn, who didn't yet know each other, to conduct several groundbreaking studies. One of them took place in China and is still among the most comprehensive health-related investigations ever undertaken. Their research led them to a startling conclusion: degenerative diseases like heart disease, type 2 diabetes and even several forms of cancer, could almost always be prevented - and in many cases reversed - by adopting a whole foods, plant-based diet.

Found on page 27 of the book:  “The fact that so many diseases are dependent on diet is the reason why, for health and healing, it is far better to rely on food (i.e., your fork) than surgery (i.e. the surgeon’s knife). Simply put: forks over knives.” 


Super duper news is that my husband was so moved by the film that he immediately adopted a whole-food, plant-based diet.  He dropped 20 lbs. in one month and feels like one hundred dollars.  He didn't over think it but rather jumped in feet first.   I am taking the more timid big-toe-in-the-water approach but will get there, and will keep you posted.  Our kids haven't noticed much of a difference.  Our son, who happens to have autism, has been gluten-free for 18 years, and our daughter is dairy-free, so modifying diets is our way of life.

Gluten-Free Coconut Layer Cake

A recent family celebration called for a special dessert.  A coconut layer cake, for my coconut-loving family.  My son follows a gluten-free diet, so I whipped up a gluten-free version that was moist and delicious!


GLUTEN-FREE COCONUT CAKE

2 cups sugar
4 large eggs
1 1/2 c. brown flour
2/3 c. potato starch (not potato flour)
1/3 c. tapioca flour 
1/2 t. salt
1 Tbsp. baking powder
1 t. xanthan gum 
1 c. canola oil
1 c. unsweetened canned coconut milk (not light)
1 t. pure vanilla extract
1 t. coconut extract
1/4 c. sweetened flaked coconut
coconut frosting (recipe follows)

  • Preheat oven to 350 degrees.  Position rack in center of oven.  Line two round layer cake pans with parchment or wax paper (trace bottom of pan and cut out using scissors) and spray with nonstick cooking spray.
  • Beat sugar and eggs for one minute.  Add flours, salt, baking powder, xanthan gum, oil, coconut milk, vanilla and coconut extracts and flaked coconut.  Beat at medium speed for one minute.
  • Pour batter into pans.  Place in oven and bake for 40 to 45 minutes, or until center springs back when touched.
  • Cool cake layers in pans for 5 minutes.  Use a small knife to cut around pans' sides, loosening the cakes.  Invert cake layers onto cooling racks.  Peel off papers and allow to cool completely.
  • Place one layer on a cake plate or platter.  Spread 1 cup of frosting over top and sides.  Place second layer on top and repeat with remaining frosting.  Pat sweetened coconut onto the top and sides of cake.

COCONUT FROSTING

1/2 c. butter, room temperature
4 oz. low-fat cream cheese, room temperature
3 c. confectioners' sugar
1/4 c. unsweetened coconut milk
1/2 t. pure vanilla extract
1/2 t. coconut extract
1/2 to 3/4 cup sweetened flaked coconut (do not mix in frosting)

  • Beat butter and cream cheese in large bowl of electric mixer until light and fluffy.
  • Add confectioners' sugar, coconut milk, vanilla and coconut extracts and beat at low until well blended and smooth.

SERVING SUGGESTION:  Serve slightly chilled or at room temperature.  Store frosted cake in refrigerator.
